What I Ate Today: Plant-Based/ Vegan

Good day peeps I am taking you along with me today. I wanted to show you what a typical day of eating looks like for me. I am still very new to eating a plant-based diet. I am testing out what foods work best for me and at what times.

 

TODAY

Breakfast

I usually like to eat oats or fresh granola from the bulk section in HEB for breakfast. Eating this gives me the opportunity to consume my fiber early in the morning. As someone who battles IBS with constipation, I always try to make sure I get my fiber. Also, many people don’t know that oats have a decent amount of protein with adding any additional protein. The key is buying rolling oats, not the instant or quick out. They have approx. 12g of protein per one cups of dry oats. I also add fresh fruit, and almond or coconut milk for added flavor.

Lunch

Two small baked sweet potatoes with black beans, corn, and tomatoes. This post workout meal is what I usually eat on days that I  lift heavy.  Sweet potatoes are my favorite carb. Black beans are also a source of plant-based protein and carb.

Dinner

Sautéed spinach, mushroom, zucchini, and onion with a little roasted sweet potato. I know that doesn’t look yummy, but it was delicious. Sometimes you can just keep it simple.

Snack 

I had a grapefruit and some strawberries.
