Today is Sunday, which means its time to Meal Prep! I thought that I would share with you some of the foods I prepped. Meal prepping will save you so much time during the week. Being a busy mom and wife, meal prepping saves my life.
I normally start off by making one or two main dishes and some side dishes. I make mostly side dishes that we can mix and match to make fun little bowls.
This week I didn’t feel like going to Costco, so I went to the fridge to see what we had. To my surprise, I found bacon, beans and potatoes. My husband loves potatoes and bacon. I tried my best to make it as yummy as possible. It was a success, and he loved it!
Let’s get to the good stuff 🙂
I started off with freshly trimmed green beans, 1/2 red onion and a bag of mini potatoes (approx one pound).
I sauteed the chopped onion in a little coconut oil until they were transparent. Then, I added this vegan bacon and potatoes.
OMG! This bacon is delicious. Since transitioning to a plant-based diet , the one thing missed was bacon. Not so much of the bacon itself, but using bacon to add flavor to dishes. This bacon gives me everything that I have been missing.
For this dish, I chopped this in 1/4 inch stripes.
Then add green beans to the dish once the potatoes are half way done. Cover the dish and let it finish simmering.
I also baked some broccoli. This is super simple. Put the broccoli on the lined baking sheet, season it, and bake on 425 degrees for approx. 20 mins.
My protein of choice this week was tofu. Tofu is super easy to cook. I literally just drained the tofu for approx. 15-20 mins, seasoned it with the seasoning below, and pan fried it without oil. OMG!! This was a hit, my husband loved it. He said it tasted like chicken, flavor wise of course.
Fresh Fruits and Veggies
I like to keep washed fresh fruits and veggies on hand, just in case we want a snack. Eden loves strawberries. At any moment she will blurt out ” strawwwwberries.”
